Walk into any liquor store and you’ll see bourbon and rye sitting right next to each other on the shelf. They look similar, they’re priced similarly, and they’re both American whiskey. So what’s the actual difference?

This is where it all starts. Bourbon must be made from at least 51% corn, which gives it a naturally sweeter, rounder character. Rye whiskey must be made from at least 51% rye grain, which produces a drier, spicier, more peppery spirit. That single ingredient swap changes everything about how the whiskey tastes.
Flavor Profile: Bourbon
Bourbon tends toward sweet, warm, and rich. Think vanilla, caramel, brown sugar, baking spice, and toasted oak. The corn sweetness is the foundation, and the new charred oak barrel adds depth. Higher-corn bourbon (like Maker’s Mark, which uses wheat instead of rye as the secondary grain) will be even softer and sweeter.

Rye whiskey leads with spice, pepper, and herbal notes. You might pick up cinnamon, clove, dark fruit, or a slight menthol quality. Rye tends to have a drier finish than bourbon and can stand up to bold flavors in cocktails. Think of rye as bourbon’s more assertive sibling.
